Michelin Flavors Upgraded for All Again! Chef XiamenAir Elevates In-Flight Dining

Starting July 15, 2025, all passengers on Xiamen Airlines flights will enjoy a more diverse range of Michelin-starred delicacies. Recently, Chef XiamenAir has partnered with Xiancheng Chinese Restaurant of Waldorf Astoria Xiamen, a newly minted Michelin one-star eatery in Fujian. This collaboration will blend the essence of Fujian cuisine with the in-flight dining, expanding Xiamen Airlines’ “all-cabin Michelin” menu and creating a seamless, star-rated dining experience from the ground to the sky.
This partnership signifies the continued enhancement and expansion of Xiamen Airlines’ “all-cabin Michelin” service. Starting July 21, passengers on Xiamen Airlines flights (operated by Xiamen Airlines, departing from Xiamen, Fuzhou, Quanzhou, Tianjin, or Hangzhou, with a planned flight time of at least 90 minutes) can order Michelin-starred meals via the Xiamen Airlines app or mini-program.
The newly added in-flight Michelin-starred options include: Shacha Abalone Shrimp Noodles which combines the flavors of street food with creative Michelin techniques to reinterpret a classic Fujian flavor memory. Tieguanyin Cold Brew Jelly, made with high-quality tea leaves from Chateau XiamenAir’s Anxi Tea Garden.


As an official partner of the Michelin Guide, Xiamen Airlines is committed to making Michelin-level dining accessible to all passengers. The new dishes, along with the previously launched and well-received “Da Hong Pao Milk Pudding” in collaboration with Michelin restaurant Yanyu, form a richer “all-cabin Michelin” menu, satisfying passengers’ diverse culinary desires.
Meanwhile, ground dining services have also been upgraded. Passengers in the Xiamen Airlines VIP lounge’s Black Diamond area can now enjoy Yongchun Vinegar Eel Claypot Rice. This dish highlights authentic Fujian ingredients and traditional cooking techniques with a modern twist.
This collaboration is a significant step in Chef XiamenAir’s efforts to build an integrated “air + ground” premium dining ecosystem.
